Skinny Banana Nut Bread Recipe
Happy World Baking Day! We love the skinny Banana Nut bread, so I had to share our family favorite recipe! To make the Skinny Banana Nut Bread, you will need the following:
ripe bananas,
eggs (optional)
honey (or maple syrup),
vanilla extract,
flour (either one- coconut, almond, wheat or all purpose flour),
cinnamon,
baking soda,
salt,
walnuts,
Optional items I used for topping- coconut flakes and ginger honey crystals.
Method:
Start by preheating your oven to 350°F. Next, generously grease a 9 x 5 baking pan with olive oil or oil spray. You can also line it with parchment paper. Next, mash your bananas in a large mixing bowl either by hand or using an electric mixer. I prefer electric mixer- it gives the best results. Then add your cracked eggs (optional step), honey or maple syrup, and vanilla to the bowl. Mix well. Then add the flour of your choice, cinnamon, baking soda, and salt. Blend until it is well combined. Finally, fold in your walnuts. Allow your batter to sit for five to ten minutes so the flour absorbs some of the liquids. Then, put it in the oven to cook for about 50 minutes. You’ll not only smell it as it finishes, but it will be golden brown on top. Another good trick for checking that it is done is to insert a toothpick in the center and pull it out. If it comes out clean, it’s ready! I topped mine with more honey, butter and ginger flakes, but it would be delicious served with your maple syrup as well.
INGREDIENTS:
3 ripe, peeled bananas
4 large eggs or eggs white (optional)
3.5 Tablespoons of honey (you can also use maple syrup if you like)
1 Tablespoon of vanilla extract1/4 cup +
2 Tablespoons of flour of your choice
1 Tablespoon of cinnamon
1 teaspoon of baking soda
1/2 teaspoon of salt (or to taste)
3/4 cup of chopped walnuts
DIRECTIONS:
1. Preheat your oven to 350° Fahrenheit.
2. Thoroughly grease a 9 x 5 baking pan with oil or spray or line with parchment paper.
3. In a large mixing bowl, mash the bananas by hand or using an electric mixer.
4. Add the cracked eggs, honey or maple syrup, and vanilla to the bowl. Mix everything.
5. Next, add the flour, cinnamon, baking soda, and salt.
6. Blend well until combined & add chopped walnuts.
7. Let the batter sit for 5-10 minutes so the flour can soak up the liquids.
8. Pour the batter into your greased baking pan and bake for about 40-45 minutes. You’ll know it’s ready, when the top is brown and your toothpick comes out clean in the center of the Bread.
9. Remove from the oven and allow to cool before cutting and serving.
10. Apply butter (preferably unsalted), honey, and ginger crystals on top, while it’s warm.
